  • 3 parsnips
  • 3 celery ribs
  • ½ medium onion
  • 1 leek
  • 4 garlic cloves
  • 2 boneless skinless chicken breasts
  • Fresh thyme, tarragon, and parsley
  • 5 cups low-sodium chicken broth

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté carrots, parsnips, celery, leek, and onion for 4-5 minutes. Add garlic, salt, and pepper; stir for an additional minute.
  2. Add thyme, tarragon, bay leaf, chicken breasts, and broth to the pot. Bring to a boil, then reduce heat and cover. Simmer for about 15 minutes until chicken is cooked through.
  3. Remove chicken from the pot and shred it using tongs or forks. Return shredded chicken to the soup and simmer for another minute.
  4. Remove herb sprigs before serving. Stir in fresh parsley for added flavor.
