Instructions

  1. Preheat your oven to 350°F and grease two 8×4-inch loaf pans.
  2. In a medium bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, and salt. Set aside.
  3. In a large bowl, mix grated zucchini, vegetable oil, eggs, and vanilla until well combined.
  4. Gently fold the dry ingredients into the wet mixture along with the walnuts until just combined; avoid overmixing.
  5. Divide the batter between the prepared pans and bake for about 50–60 minutes or until a toothpick inserted comes out clean.
  6. Let cool in pans for about 15 minutes before transferring to a wire rack to cool completely.
