  • 4 medium potatoes (diced)

  • 6 cups chicken broth
  • 1 bunch kale (chopped)
  • 1 cup heavy cream

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium heat. Add the Italian sausage, breaking it apart as it cooks until browned (about 5-7 minutes). Drain excess fat if necessary.
  2. Add diced onion and sauté for 3-4 minutes until softened. Stir in minced garlic and cook for another minute.
  3. Mix in diced potatoes, pour in chicken broth, and bring to a boil. Reduce heat and simmer for about 15 minutes until potatoes are tender.
  4. Stir in chopped kale and red pepper flakes (if using) and cook for an additional 5 minutes.
  5. Lower heat and gently stir in heavy cream. Season with salt and pepper to taste. Allow to warm through for another 2-3 minutes before serving.
